COVID killed my event calendar. I had gotten into a groove around monthly tastings at Sugar Bowl, regular beer dinners at Underground and the occasional pop-up event somewhere else. Most of that has been blown away. However, I have re-started my Underground pairing events. We had our first one in the spring and we are holding another one in early November – November 7 to be specific.
If you are in Edmonton you should consider coming. It is an intimate event, 25 people maximum. There is a welcome beer and then four pairings with dishes custom made by Underground’s Executive Chef Lang Hsaio, who may be one of the most under-rated chefs in town. He goes all in on creating dishes that fit the beer and are delicious without them. When we first started doing this, I wanted to have an active hand in deciding what the dishes were. After a couple of these, I have let go. Invariably he tells me what his plan is and I go “oh, yeah. that works.” He has got this!
The theme for the upcoming pairing is YEG Hidden Gems. I am going to offer a few beer you likely have never tried. And you may have never even heard of the brewery. But I can attest the beer is really good. And the food will be even better.
